Semolina is a milled, cleaned and specifically selected duram wheat which produces a high quality patent flour. It is a coarser version of duram flour and is ideal for baking and a large variety of recipe and has a large range of uses.
Polenta is produced when ground maize is boiled and turned into cornmeal. It is yellow in colour and is naturally gluten free. Polenta cooks quickly and can be added as a base to a meal or used as a topping for meat, vegetables and beans.
