Bulgur, also known as Cracked wheat, is a whole wheat grain that has been cracked and slightly pre-cooked. It is very high-fiber, low-fat, low in calories and vegetarian and vegan. It is most commonly found in tabouli salad and can also be used as a subsitute to rice, couscous or any other whole grain such as barley or quinoa in many dishes including stir-fry and curry.
Cous cous is made using whole wheat durum flour and water. During this process it is partially cooked which makes it very quick and easy to prepare at home. It is great in in a range of recipes including salads, stuffings and side dishes. It is also a good source of low GI carbohydrates and fibre and is very low in fat.
Pearled barley is barley that has been processed to remove the bran and hull. It cooks faster and is less chewy than traditional barley and therefore is consumed most commonly. It is hearty and is wonderful in soups and stews as well as stir-fry and many other dishes. It is an extremely good source of fibre and selenium and also phosphorus, copper and manganese. Fibre is excellent for good general health and well-being. It is also great for colon health and type 2 diabetes and managing blood sugar levels.
