Blanched almond meal is made from grounded raw whole blanched (skinless) almonds. It has the consistency of a fine crumbly flour and is also known as almond flour. It is both gluten free and grain free and is a great alternative to common flour in baking. Almond meal also has a low carbohydrate content and is high in fibre, protein and vitamins and minerals including iron, magnesium, potassium, calcium and vitamin E.
It can be used as a substitute for any wheat based flour in all recipes to make gluten free or paleo versions, however some recipes may need additional eggs to be added to help add structure. Almond meal is also great used as a crumb for fish and chicken.
